在社交媒体的“打卡经济”发展下,消费者对餐饮空间的期待值呈现多元化趋势,这其中衍生了一批以场景先行的网红餐饮空间。极具视觉吸引力的空间场景带给人们短暂的感官刺激,喧嚣过后留下了仅有疲惫和一段“我来过”的照片记录,而忽视了食物本身的美味和情感体验。

Under the influence of social media, customers bear various expectations for restaurants, which results in plenty of internet-famous restaurants striving to create a photogenic backdrop. Dining spaces of strong visual appeal always stimulate human senses transiently. Busy about taking photos to impress friends on social media, guests have ignored the delicacy of food and sentimental experiences in restaurants.

 

 

一个餐饮空间的诞生和长久,关键在于餐厅精准的客群定位,由此释出丰富美味的菜品,以及与之相配的空间场景,为消费者营造一段完整且可感知的情感体验。

The key to operating a successful restaurant lies in the precise positioning of its customers. On this premise, various delicate dishes match with space decorations to create complete and perceivable sentimental experiences for patrons.

对于设计而言,要做的就是让这个过程自然而然地发生。JYDP间睦设计的近期新作——法式炭烤餐厅「Charbon」,与之呈现出持有相同理念的餐饮空间设计。

Following the concept that design arouses human sentiments naturally, JYDP completed their new project Charbon, a French charcoal grill restaurant in Shanghai.

 

 



 

 

Part two -空间源起, 浮华退让,让自然流淌

Part two- Origin of space, Brimming with nature

 

 

「Charbon」由米其林三星名厨Paul Pairet主理,坐落于上海环贸iapm。“Charbon”在法语中解作“煤炭”,餐厅犹如其名,时刻燃烧的炭火与嗞嗞冒油的串烧。

Charbon is a new restaurant opened by the three Michelin stars chef Paul Pairet in the iapm mall, Shanghai. Charbon is a French word that means "charcoal grill" and the restaurant features an open charcoal fire and sizzling skewers.

出生于法国的Paul Pairet,在展示烹饪上的无限创新力的同时,将法国料理的考究精神和对烹饪所抱有力求完美的执着,延续至餐厅的空间设计参与中。在他看来,用餐环境理应服务于餐品,无需过多的跳跃色彩、繁缛装潢和元素堆砌,食客得以心无旁骛的享受用餐过程。

Born in France, Paul Pairet shows his infinite creativity in cooking and extends the exquisiteness of French cuisine and his pursuit for perfection into the space design of the restaurant. He believes that the dining environment should serve the dishes. Without unnecessary bright colors or redundant decorations, it can make patrons enjoy food without distractions.

 

 

基于此,JYDP摒弃喧闹浮华的表达形式,采用“退让”的空间构想,从经营者角度探寻餐饮空间的商业价值,从消费者视角感受空间的愉悦度,依循餐厅的法式炭烤基因,汲取五行意象,以其低暗光影、自然肌理和金属质感铺就内敛平和的用餐情境。

As a result, JYDP avoided complicated design expressions and envisioned the space in a retreated method. By excavating the commercial value of the restaurant from the perspective of operators and feeling the comforts of space from the perspective of consumers, JYDP followed the features of French charcoal grilling and adopted the imagery of five elements to create restrained and peaceful dining vibes through subdued light and shadow, natural grain and metal texture.

 

 



 

 

Part three-野奢之境

Part three-A vigorous luxurious realm

 

 

解构自然中的金、木、水、火、土等五行物质,循万物本质,探索食之本味。JYDP以“逆向”思维对原始材质进行反复研磨,这一过程倾注其独到的匠心,皆融于极致野奢的用餐氛围之中。

Deconstructing and following the fundamental five elements of metal, wood, water, fire and earth, JYDP explored the original taste of food. With "reverse" thinking, the design team considered and discussed the use of materials repeatedly, and this kind of repeat deliberations   are injected into the ultimate vigorous and luxurious vibes.

 

 



金之光泽-Luster of metal

木之质朴-Simplicity of wood

 

 

深沉静谧的餐厅入口,在周遭固有的冷凝白光下衬托而出。「Charbon」LOGO和暗黑碳化砖,结合方形几何体,堆叠于构成理性基调的暗暖金属锈板。弧形金属外立面采用半遮挡的隔断,显现出餐厅的内在本色,不失通透性的同时,造就了一种微妙的分隔感。

The calm and serene entrance is set off by the white lights around, where the logo of Charbon, dark carbonized bricks and rectangular slabs are arranged on the dark and warm rustic metal panel in a rational tone. The curved metal facade points out the dining area, which shows the interior and maintains transparency while creating a subtle sense of partition.

 

 



 



 



 



 

 

餐厅的内部空间被纵横的金属饰面包围,经过处理的锈板布满岁月痕迹的肌理。木元素作为衬托,亦讲究“巧工之意”,为了更好的映射出自然的细腻和炭烤的野性,几经试色和表面刚刷处理,终得契合餐厅调性的颜色,与浅灰色的混凝土地板形成对比。

Metal finishes wrap the interior space vertically and horizontally, in which the rustic panels convey the traces of time. With skillful ingenuity, the dark wooden backdrop responds to the restaurant vibes after several color tests and surface brushing, forming a contrast with the concrete floor and reflecting the natural delicacy and the vigor of charcoal grilling.

水之润泽-Moisture of water

 

 

通往二层的楼梯饰面,其设计巧在大面积碳化砖的呈现。在天花顶光的反射下,高压水枪冲洗后的碳化砖,晕染出更为深色的墨黑。

By excavating the commercial value of the restaurant from the perspective of operators and feeling the comforts of space from the perspective of consumers, JYDP followed the features of French charcoal grilling and adopted the imagery of five elements to create restrained and peaceful dining vibes through subdued light and shadow, natural grain and metal texture.

火之炙热 - Heat of fire

 

诚然,一个充满能量、温暖和感官体验的餐厅,离不开对于细节要求的把控,或可延伸至桌椅的制作。

To create a restaurant full of energy, warmth and sensory experience, commitment to details is necessary, including the manufacturing of desks and chairs.

 

 

 

 

 

 

 

 

设计为了更契合餐厅的炭烤定位,原本定制的胡桃木桌经由明火烧制后,表面碳化木逐渐脱落。尽管桌子的使用年限被人为的缩短,却使它成为对野性粗粝的直接阐释。

To meet with the positioning of a charcoal grilling restaurant, the design team burnt the customized walnut wood tables, and the carbonized tabletop surfaces are gradually peeling. Although the life span of the tables becomes shortened, they are direct visual expressions of vigorous roughness.

 

 

 

 

 

 

不妨想象一下,特调制的日式酱撒在腌制的双片羊排、青蛙腿和鸭腿等一系列串烤上,根据食客口味提供的葡萄酒,连同压轴出场的冰品,一一呈于在碳化木桌上,共同叙写极端戏剧化的炭烤意象。

When grilled and glazed sautéed lamb, bullfrog and duck skewers with the specially prepared Japanese sauce, wines of all kinds of flavors and soft serve ice creams are served on the carbonized wood table, a dramatic image of charcoal grilling emerges.

餐厅之道,在于食客之心。不同于街头巷尾的烧烤摊,或是嘈杂夜里的大排档,JYDP打破大众对于烤物为主的餐厅的固有印象,在烟火气之间重现炭烤的新维度,赋予食客更深层次的珍馐体验。

The success of a restaurant lies in standing in line with the patrons' minds. Different from barbecue stalls in the streets and alleys or sidewalk booths on noisy nights, Charbon breaks the stereotype of grill restaurants and rebuilds a new dimension of casual open-fire grilling among cooking aromas, creating a profound dining experience for patrons.
